There used to be a preview function on escholarship, which I am not finding now, where you could view previous submissions. Does it still exist? It would be great to access it? Can you let me know how to find it?

There is a Preview function when you are submitting items. You should see it in the pending/edit view at https://submit.escholarship.org. See an example below:
